The founder, Morgen Jacobson, has a background as a chef and operator with experience that ranges from luxury dining – as the chef at the legendary Quilted Giraffe, and as the chef and owner of Quince, both in New York City – to a high volume brasserie in San Francisco. His experience also includes the rehabilitation of a large steak and chophouse in the Midwest, a New York City restaurant landmark, and a multiple outlet South East Asian restaurant group in California. New concept creation includes a farm to fork restaurant and a modern steakhouse, both in Florida. Morgen's international experience includes creative development and opening of two concepts in the U. K., and creative development and menu analysis for a large restaurant group in Spain. He has extensive knowledge of wine and spirits through study with the Court of Master Sommeliers and the Wine and Spirits Education Trust.
